Who didn't love Smore's as a kid? Chocolate, graham cracker, marshmallow--hello?
In an effort to recreate (and healthify) the childhood favorite- I snapped up a type of flour I didn't actually know existed...
4 g fiber and 4 g protein per serving? Um, yes please.
Campfire nostalgics, I give you:
Healthified Banana S'more Mini Muffins (adapted from OSG Flax Oat Power Muffins)
Because let's be serious- who doesn't love bite sized goodies? Plus tons of omega 3s, fiber, and protein. Notice the missing guy in the top right corner? Someone couldn't contain herself before the photo was taken. (And I'm the only person home, you do the math).
Ingredients:
2 ripe bananas, mashed
4 tsp smart balance oil (or olive, canola, etc)
5 TBSP liquid egg whites (or 2 eggs)
1/4 cup splenda brown sugar (or regular)
1 TBSP cane sugar
1 cup flaxseed meal (or ground flaxseed)- holy omega 3s!
1/2 cup whole wheat graham flour (or any other kind)
1 cup rolled oats
1 tsp. baking soda
1 tsp vanilla stevia
2 TBSP dark chocolate chips
Directions:
1. Preheat oven to 350F.
2. In one bowl, mash 2 bananas with oil, brown sugar, egg whites, vanilla. In a separate bowl, mix flour, sugar, flax,rolled oats, baking soda. Pour wet into dry and mix. Stir in chocolate chips.
3. Scoop ~1 TBSP of batter into each (greased) mini muffin tin. Bake at 350F for ~15 minutes. Makes about 24 mini muffins.
4. Eat by a campfire your space heater.
How cute are they? My house seriously smells amazing- I'd definitely recommend the graham flour! I got it at a normal super market (Giant Eagle) so check your local stores.
