Scenes from a day off...
Oh yea, there was certainly bread involved.
Hearty Molasses Bread w/ Pecans and Currants
No chocolate or peanut butter in sight, oh my! This bread really knocked my socks off, surprisingly.
And then I put them back on cuz it's ridiculously cold here in the Burgh.
Recipe adapted from Eating Bird Food
Ingredients:
Dry:
1 cup WW flour
1/4 cup oat flour
1/2 tsp baking soda
1 tsp baking powder
1/8 tsp sea salt
1/2 tsp cinnamon
2 TBSP brown sugar (splenda variety)
Wet:
1/2 cup greek yogurt (I used Fage 0% plain)
1 tsp orange extract
3 TBSP liquid egg whites (1 egg)
2 TBSP blackstrap molasses
1 TBSP maple syrup
Mix-ins
1/4 cup currants
1/4 cup chopped pecans
Directions:
1. Preheat oven to 375F. Grease breadpan.
2. Combine dry ingredients in a large bowl. Mix wet ingredients in a small bowl. Pour wet into dry, mix until just combined.
3. Add pecans and currants (or raisins, walnuts, chocolate chips,etc).
4. Bake for 38-40 mins at 375.
5. Try to contain yourself as your house fills with the smell of molasses.
6. Let cool, then cut and enjoy.
