Go Fish

Last night we went to one of our favorite restaurants, BRGR with a few friends.

I was excited to try their new California BRGR: Turkey burger w/ sprouts, avocado, mozzarella, pesto mayo, oven roasted tomatoes.

This BRGR was by far the best I've had yet. Absolute summer perfection.
We hung out at our apartment for a bit... Funny faces and impromptu dance parties were 100% necessary.

Then we headed out to meet up w/ some friends..

First time marathoner and half marathoner! Congrats ladies :-)
Today I was craving some vitamin D, but needed to study something fierce. The hubs compromised by suggesting I study outside while he went fishing. Done. Outdoor photo montage ensues.

First bathing suit foray of the year. Must. Use. Sunless. Tanner.

When we got home I had the most overwhelming urge to bake. I realized the last time I baked anything was at least a month ago! So I multitasked..
Biscotti in the oven..

A DVR'd episode of How do I look? (Check out the wall cling my MIL gave us for Xmas. Hubby finally finished painting the living room last weekend so up it went :-) ) .

And a weight training workout. Perfecto.

Sugar and Spice Protein+ Omega Biscotti

Protein from whole grain flour and soy protein powder, healthy fats from flaxseed, pecans, and chia seeds, deliciousness from chocolate chips and dried fruit. I dare you to have just one!

Ingredients:
1/2 cup spelt flour
1/2 cup WW Graham flour (or WW)
1 scoop vanilla soy protein powder (or your fave)
1 tsp baking powder
1 tsp cinnamon
2 heaping TBSP brown sugar
1 packet truvia (or sweetener to taste)
1/2 tsp ea. ginger + pumpkin pie spice
1 TBSP ground flaxseed
1 TBSP chia seeds
1 TBSP butter
1 TBSP molasses
1/2 tsp each butter, almond, orange extract
2-3 TBSP milk
1 flax egg (1 TBSP flaxseed, 3 TBSP water)
Mix-ins: 2 TBSP each pecans, dried cranberry-pomegranate mix, chocolate chips
Directions:

1. Preheat oven to 350F. Grease baking sheet. Mix flax egg (1 TBSP ground flax + 3 TBSP water), set aside.
2. Combine flour, baking powder, spices, and sugars into a large bowl.
3. In a separate small bowl, mix margarine, flax egg, extracts, milk, and molasses. (Feel free to add milk by the TBSP if mixture is too dry).
5. Fold in mix-ins.
6. Mold batter into a large "log." (about 1/2 inch thick) Place on greased baking sheet.
7. Bake at 350F for 20 minutes/until browned.
8. Remove from oven and allow to cool ~10 mins.
9. Cut into slices and turn each slice onto one side.
10. Place back in the oven for 10 minutes.
11. Remove, flip slices of biscotti, and bake again for 8-10 minutes.
12. Allow to cool and enjoy!
