Moving on- I started a new clerkship today, and I must say it is a WELCOME change from the rotation-that must-not-be-named. Although I spent the morning suturing pig's feet (I can now do a basic stitch... wohoo!), I spent the afternoon in ENT (Ear, Nose, Throat) clinic which was fast paced (preventing boredom). Only issue in this clinic? They don't stop to eat! I'm already planning how I can strategically stuff my pockets with food to get me through the day. Sadly, spinach and hardboiled eggs are not exactly pocket portable. Le sigh.
New beginnings means new baking creations (ok that's a lie, I don't need an excuse to bake goodies :-P), so here's what happens when you combine chickpea flour, coconut vanilla yogurt, and peanut butter (just stay with me here I promise it worked)
Peanut Butter Coconut Chickpea Blondies
If I told you, you could have it all, would you believe me?
Then try this recipe and I promise you won't be disappointed about the insane
combo of protein, protein, and healthy fat. WIN.
(Roughly based on OSG blondies)
Ingredients:
1 cup chickpea flour
1/2 cup brown sugar
1/4 cup splenda baking blend (or sugar)
1.5 tsp baking powder
1/2 tsp salt
1/4 cup earth balance
1/4 cup canola oil
1/4 cup coconut vanilla yogurt (I used light 'n fit)
1/4 cup natural peanut butter
2 TBSP vanilla agave
1/8 cup maple syrup (optional)
2 flax eggs (2 TBSP flaxmeal, 6 TBSP water)
1/2 tsp coconut extract
1/4 cup shredded coconut
3 TBSP chopped pecans
3 TBSP raisins
Directions:
1. Preheat oven to 350F. Grease a 9x9 square baking pan.
2. Mix flax eggs and set aside. Mix dry ingredients (flour, sugars, baking powder, salt, coconut) into a large bowl.
3. Melt butter. Mix butter, flax eggs, coconut extract, agave, maple syrup, PB, oil in a small bowl.
4. Pour wet into dry, mix til well combined. Add in pecans and raisins (or chocolate chips, etc).
5. Empty batter into baking pan. Bake at 350F for ~30 mins.
6. Attempt to make a chickpea blondie tower...
Then watch it tip over...
Then we improvise..
These are fluffy pillows of subtle coconut and rich peanut butter flavor. I had one for breakfast this AM and may have snagged a second on the way out the door. I mean come on, how can you pass up protein-packed chickpea flour that you can't even taste?
