Energy

Energy.

We all need it to get through the day (or at least do so willfully). A balanced diet, exercise, and sleep can certainly help to boost it. Every once in a while we still need a kick in the pants to ourselves going-- and mine today came in the form of peanut butter. And chocolate.

Behold...
OMG Vegan Energy Squares
(from Mama Pea's Vegan Energy Bars)

With a swirl of peanut butter, raisins, dark chocolate and pecans- one bite will have you saying OMG.
The combination of sweetness mixed with healthy fats and fiber will boost your mind and body :-).

Ingredients
2 cups quick oats
1/4 cup whole wheat graham flour
1/4 cup spelt flour
1 tsp baking powder
1/2 tsp sea salt
1/4 cup stevia baking blend (or splenda/sugar)
2 flax eggs (2 TBSP ground flax w/ 6 TBSP water)
1 TBSP brown sugar
1/4 cup raisins
2 TBSP dark chocolate chips
2 TBSP peanut butter chips
2 TBSP chopped pecans
1/4 cup maple syrup (I used sugar free)
1/2 tsp vanilla
1/4 cup natural peanut butter (I used chunky)
1/4 cup maple walnut butter (new!- ok to use 1/2 cup of PB or AB instead)

Directions:
1. Preheat oven to 375F.
2. Mix dry ingredients (oats, flour, salt, baking powder, stevia) in a large bowl. Fold in chocolate chips, raisins, peanut butter chips, and pecans.
3. Mix other ingredients (maple syrup, brown sugar, nut butter, vanilla) in another bowl. Mix in flax eggs.
4. Pour wet into dry and mix well. Batter will be dry, feel free to add a splash of milk to moisten it up.
5. Scoop batter into greased baking pan (I used a bread pan- all I had!).
6. Bake at 375F for 15 minutes. Allow to cool before cutting into squares/bars.

I had a sample and headed over to the gym for some cardio- 3 quick miles on the treadmill and 2 on the elliptical. Yay for energy :-).

Any plans for the weekend? I have a friend's party on Saturday and brunch on Sunday. With some studying and baking certainly mixed in (I'm all stocked up on baking ingredients)!
