Sneaky Veggies

Hi all-
I've mentioned in the past that I'm a big fan of sneaking veggies into meals when I'm not feeling so green. Here are some ideas:

1. Carrot Mango Sweet Potato Sorbet (say that 3x fast)- 1/3 cup fresh or frozen shredded carrots, 1/2 cup frozen mango, 1/3 cup frozen sweet potatoes (I used frozen for all 3), splash of soymilk. Blend. Top w/ greek yogurt, pumpkin pie spice, and sliced almonds.

2. Green (or Blue) Smoothie: 1/2 cup blueberries, 1/3 cup strawberries, 1/2 cup spinach, 1/2 banana, 1/4 cup shredded carrots, amazing grass (optional), squirt maple syrup, stevia/splenda/agave to taste

3. Chocolate Chip Zucchini Bread/Muffins: Try Mama Pea's Choc Chip Zucchini Muffins

4. Tofu Scramble (or scrambled eggs!)- sneak some spinach into your breakfast omelet, your dinner, etc.

5. Angela's Chilled Double Chocolate Torte- this looks delicious- and has the equivalent of 4 avocados in it!

What are your ideas for sneaking veggies into meals? This will be helpful when we one day have kids!
